No-Bake Chocolate Peanut Butter Oat Bars


These no-bake chocolate, peanut butter oat bars are an easy and delicious treat for the summer months when you don't want to turn the oven on. We enjoy them all year long though on a steady basis, kids and adults alike love them!


Ingredients:

1 cup unsalted butter

1/2 cup packed brown sugar

1 tsp vanilla extract

2 cups rolled oats 

1 cup quick cook oats

1 tsp cinnamon

1/2 tsp salt

1 cup semi-sweet chocolate chips

3/4 cup peanut butter

Directions:

Line an 8"x8" square baking pan with parchment. 

In a large saucepan, melt the butter and brown sugar on medium heat until sugar is dissolved. Add in both types of oats, cinnamon and salt. Stir for about 2 minutes. Remove from heat and stir in the vanilla. 


In a small saucepan on low heat melt the chocolate chips and peanut butter until smooth. 

Using a rubber spatula, spread 2/3 - 3/4 of the oat mixture into the prepared pan and press down. Spread 3/4 of the chocolate mixture evenly over top. Then drop small dollops of the oat mixture over top of the chocolate layer. drizzle the rest of the chocolate over top. Allow to cool and then refrigerate until set before cutting. Store in the refrigerator or freeze some for later.
